I am very confused by the interface and by the fact most tutorials are from older interfaces.
All i need to do is takeoff, with a legend, that i can export quantities from. can someone give me a step by step tutorial on how to do so?

I have not used Square Takeoff so I cannot comment on the comparison to Bluebeam. If you only need to perform takeoff then at a minimum you will need to get a handle on the Measure, Measurement Panel(& related Properties Panel), Tool Chest, & Markups List.
Starting with Measure. At the top you will see the tools menu and within it Measure. These are all of the measurement tools in Bluebeam. The basics I would recommend using are Area, Perimeter, and Count. Apply any one of these Measurements to a page (you will then be asked to apply a scale). Once you have a markup applied to the drawing you can find it in the Markup list. This list shows ALL of the markups you have put on the document so far, and can be sorted and filtered similar to a table in a spreadsheet. You will notice the Markup that you just applied as the Subject "Area/Perimeter/Count Measurement", This subject, along with other properties of the markup, can be changed within the Measurement Panel (if you don't already see this, go to Windows→Panels→Measurements).
Applying and renaming markups can be a tedious process, which is where the Tool Chest comes into play. After you have set the Properties of the markup you like, you can right click it choose "Add to Tool Chest". Then you can simply click directly from the Tool Chest and apply this newly created markup with properties pre-assigned in the same way you would have from any of the Measure tools.
Once you have completed your takeoff, you can reference the Markup List to see a complete table of the markups applied during takeoff.
This is a basic workflow and there is much more to learn but this should at least guide you in the correct direction.
The very first thing you need to do is Change your Profile. Revu> Profiles> Revu Advanced. Once you've done that you'll see some of the abilities of Revu. I would take @Jason Artley 's suggestions and look at Bluebeam University. It'll walk you through the basics pretty quickly. Good luck!
You can use the gear icon to make a legend per the toolset you're on in the Toolchest panel which will insert into the workspace:
You can also use the Export feature in the Markups List panel if you want the values in a table on a PDF or Excel outside of the current PDF:
There's a lot you can accomplish with some initial legwork on the profiles, but out of the box you can still get some robust outputs. Some of the consultant drawings I receive have a protected scale and when taking measurement and areas it doesn`t show up in the markup list. Also the drawing is blued out. Is there away around this Many thanks Murray
